Quinoa Chicken Salad

serves 4        15 minutes

As Healthy As It Gets


  • 300g quinoa
  • 3 dried tomatoes
  • 100g baby spinash
  • 4 spring onions
  • fresh coriander
  • fresh mint
  • 1 mango
  • 2 limes
  • 1 avocado
  • 50g feta cheese
  • 2 chicken breasts
  • 1 teaspoon alspice
  • 1 teaspoon paprika
  • olive oil
  • 2 peppers


  1. Put the quinoa in a pan and cover with boiling water
  2. Put the spinach, dried tomatoes, baby spinash, spring onions, coriander and mint in a foodprocessor and blitz to make a “pesto” like mixture
  3. Put the chicken on a large sheet of baking paper, toss the spices on, fold over the sheet and flatten the chicken with a rolling pin. Then bake for 2-3 minutes on both sides.
  4. Cut the peppers and add to the chicken.
  5. Peel and dice the mango and the avocado and the add everything together ENJOY!
