Super Healthy Banana Muffins

Have you got some overripe bananas laying somewhere? We all agree that those are not the nicest thing to eat on it’s own. But don’t throw them away, because you can make lots of different delicious things with them. Think of banana-icecream, bananabread, bananapancakes. The internet is full of left over banana recipes and I have tried a lot, but most of the time, I don’t really like the superhealthy banabread recipes without any butter or sugar added. So I started to experiment a bit and this is my final recipe. I used just a little bit of maple syrup and coconut oil, but this make all the difference. Especially with the added yoghurt aswell, this all gives the bananamuffins a nice and moist texture.. Yummm

Instructions
  1. Preheat the oven to 160 C
  2. Mash 2 bananas. Add the coconut oil, yoghurt, maple syrup and the eggs and mix well.
  3. Then add the flour to the mixture and mix on medium speed for a minute.
  4. Divide the mixture over the cupcaketin. Mash the third banana and put a tablespoon of mashed banana in the middle of the cupcakes and top them with some grated coconut
  5. Bake for 25-30 minutes and top with some more coconut.
